as a modern invention, its origins are nearly as
old as the original beverage itself.
History shows that a few hundred years ago in
the Middle East, people enjoyed drinking flavored
coffee blended with nuts and spices.
In modern times, innovative marketers have
capitalized on coffee drinkers' desire for more flavors
than nature can provide and have found new ways to
introduce flavoring agents into coffee.
First, flavored syrups were used to spike brewed coffee
with a touch of a favored flavor. More recent improvements
in food science have led to ways of introducing complex
flavors directly onto the beans as part of a post-roasting

trade standards to provide small-farmer
co-operatives a guaranteed price above the
conventional market. Not all Fair Trade
Certifiedä coffee is necessarily organic.
However, Fair Trade CertifiedTM does require
strict environmental stewardship such as
prohibiting the use of genetically modified
organisms (GMOs) and the most hazardous
pesticides.
Seventy-eight percent of all Fair Trade Certified
TM coffee sold in the United States is certified
organic. In the United States, transactions must
be audited by TransFair USA to use a Fair Trade
CertifiedTM label. Certified organic producers of
Fair Trade coffee receive at least $1.55/lb (as of
June 1, 2008).

Ethiopian Coffee, Yirgacheffe!
Ethiopia
The natural home of the arabica tree and t
he setting for most of origins coffee legends,
Ethiopia is Africa’s top arabica exporter and
leads the continent in domestic consumption.
About 12 million Ethiopians make their living
from origins coffee, whose name is said to be
a derivation of “Kaffa,” the name of an Ethiopian
province.
Notable Beans: Harrar, Sidamo, Yirgacheffe
Ethiopia produces some of the most unique and
fascinating coffees in the world, and the finest
Yirgacheffe examples possess an extremely
noticeable floral aroma.
Yirgacheffe is grown near Yirgacheffe, in the
district of Sidamo, in southern Ethiopia. The bean
is grown in the mountainous regions at high
altitude, is wet processed and results in a truly
amazing cup! Medium body, medium acidity,
with ash and smokey notes.

noticeable floral aroma.
Yirgacheffe is grown near Yirgacheffe, in the
district of Sidamo, in southern Ethiopia. The bean
is grown in the mountainous regions at high
altitude, is wet processed and results in a truly
amazing cup! Medium body, medium acidity,
with ash and smokey notes.
